The holidays are the perfect time of year to practice new recipes. Many people don’t have the time to try something new on a weekday morning or even some busy weekends, but the slower holiday mornings are an ideal time to experiment. With a little more time on your hands, it’s also far less frustrating if a new recipe doesn’t go over well with the rest of the family.
During the holidays we aren’t following our normal routine which is why having healthy snacks around is essential. We’re often eating at different times throughout the day and it’s important to have healthy snacks around when hunger strikes or neighbours pop over for a visit. The following muffin recipe is one of our favourite go-to holiday snacks. Packed with nuts for some excellent protein and fat and no refined sugar to help keep blood sugar stable, they are a wonderful option to have at the ready.

Healthy Ground Nut & Fruit Muffins
- 2 ½ cups ground nuts (almonds or pecans)
- 1/3 cup honey (warm slightly so it’s runny)
- 1/8 tsp sea salt
- 1 cup unsweetened apple sauce*
- ¼ cup melted ghee or olive oil
- ½ teaspoon baking soda
- 2-3 eggs
- Preheat oven to 375°F
- Combine all ingredients
- Fill muffin tins only half full with batter – they really rise up!
- Bake for 15-20 minutes until muffins spring back when pressed
Makes 12 muffins or 24 mini muffins.
*Get creative! Instead of apple sauce, try mashed banana, blueberries or grated carrots & zucchini!
